SUMMARY:

Chia (Salvia hispanica) is a seed of high nutritional and functional value, widely
recognized for its composition of fibers, proteins, essential fatty acids, and bioactive
compounds. However, chia plants can be affected by biotic stresses, such as attacks by
root-knot nematodes. This study aims to investigate the effects of Meloidogyne javanica
parasitism on nematological and vegetative characteristics, as well as on protein
content, phenolic compounds, and antioxidant activity in chia. Two trials were
conducted with increasing initial population levels: 0, 500, 1500, 3000, and 4500 eggs
and eventual second-stage juveniles (J2) of M. javanica. Nematological variables
increased proportionally to the applied doses, with the total number of nematodes
ranging from 6.450 to 18.200 eggs+J2 in trial 1, and from 3.331 to 58.406 eggs+J2 in
trial 2, between the lowest and highest doses. The vegetative variables evaluated in both
trials root length, chlorophyll index, fresh mass, and dry mass did not show a significant
effect as a function of the inoculated M. javanica concentrations. The protein content of
chia seeds reached a maximum estimated value of 19.66 g 100 g-1, while the total
phenolic content reached 216.18 mg 100 g-1. Antioxidant activity determined by the
DPPH method showed a maximum estimated value of 0.7011 μmol TE 100 g-1. The
highest values obtained using the ABTS and FRAP methods were 1.42 and 2.58 μmol
TE 100 g-1. Chemical analysis by UHPLC-LC enabled the identification of 16
compounds in chia extracts, belonging to the classes of organic acids, phenolic acids,
flavonoids, phenolic aldehydes, and alkaloids. Taken together, the results indicate that
parasitism by M. javanica induced changes in the nematological parameters and
chemical composition of chia, demonstrating the cultivar's susceptibility and
physiological responses to stress.
